Tagliatelle With Prawns, Bacon and Courgette

Yesterday there was a lonely courgette in the fridge and a bag of prawns defrosting on the counter. I was unsure of what to make for dinner, but bringing these two ingredients together seemed like a good plan. With plenty of pasta in the pantry, I was thinking along the lines of a big bowl of penne or linguine in a rich creamy sauce.

Looking for inspiration on the Internet I came across a fabulous site called Drizzle and Drip. Sam’s recipe for Chilli and Garlic Prawn Linguine with Bacon, Zucchini and Lemon caught my eye straight away. Of course I needed to pick up some bacon but as our local butchers has the best smoked bacon I have ever tasted, I was more then happy to make the journey. The fresh air made me even hungrier (I must confess one of their freshly made sausage rolls found it’s way into my belly).

I didn’t follow Sam’s recipe exactly but it still tasted great. This is a recipe I will make time and time again. It is light, refreshing and makes a nice change from the heavy cream sauces I tend to favour (butter, cream and cheese are the holy trinity of my sauce making).

What also appealed to me was the way the courgette / zucchini was prepared. I have grated it in pasta before but the long ribbons worked really well with the tagliatelle. I was also skeptical about adding the courgette ribbons to the pasta water toward the end of cooking fearing they would be extra watery and bland. They weren’t.

So here is my version of the recipe but please do check out Sam’s website, she has a wide range of yummy looking recipes I can’t wait to try.

Tagliatelle With Prawns, Bacon and Courgette (serves 2 with enough left over for a tasty lunch the next day)

Ingredients

350-400 grams of tagliatelle

225 grams of frozen king prawns

3 rashers of smoked streaky bacon (and one sausage roll to eat on the way home!)

1 medium sized courgette / zucchini

2 cloves of garlic

1/2 tsp of crushed chilli flakes

2 Tbsp of double cream

2 Tbsp of lemon zest

Juice of 1/2 a lemon (you might want to do this to taste)

3 Tbsp of chopped flat leaf parsley

Splash of olive oil

Salt and Pepper to taste (I only salted the pasta water – the bacon is quite salty)

Directions

Cook the tagliatelle in salted water according to the directions on the pack (go for al dente)

Using a peeler, peel the courgette into ribbons

When the pasta is almost done, but not quite, add the courgette ribbons to the water and cook with the pasta for 1-2 minutes before draining

While the pasta is cooking cut the bacon rashers into small bite sized pieces and add to a pan

Cook the bacon through and then add the drained, frozen prawns and mix well so the prawns soak up some of the bacon fat

After 2-3 minutes when the prawns are heated through and the bacon is crispy, add the crushed garlic, 1/2 tsp of dried chilli flakes, lemon juice and zest

Mix everything together well before adding a splash of double cream and the chopped parsley

The pasta (and courgette) should be cooked and drained at this point

Simply add the pasta and courgette to the pan with the bacon and prawn mixture

Toss well and serve immediately

Traditional English Parsley Sauce...

Feeling confident after my triumph with a basic beurre blanc sauce, I decided to try my hand at a traditional English parsley sauce. This is a tasty sauce to have with white fish or salmon cakes and we enjoyed it very much with some smoked gammon. Essentially it’s a basic white sauce with the addition of freshly chopped parsley. When researching recipes I found that many didn’t include a squeeze of fresh lemon juice but it really gives the sauce added zing. I wouldn’t make the sauce without it now!

There is nothing quite like going out to the garden to gather fresh herbs to cook with. Parsley grows quite easily and makes a lovely addition to any garden. If you don’t already grow your own herbs then it’s definitely worth giving it a go! Check out this site for some amazing gardening tips.

Parsley, one of my all time favourite herbs is full of taste and great health benefits. Among other things it has Vitamin C, Iron and is also an excellent source of Vitamin K, Vitamin A and Folate. Try adding it to salads, burgers, omelettes, fresh juices and soups. You can even sprinkle it on pasta and rice dishes as well as over pretty much anything!

So if you want something special to accompany your fish dish or gammon then look no further! This parsley sauce from the Good To Know Recipes website is a real winner!

Parsley Sauce

Ingredients

• 425ml full fat milk

• Bunch of flat leaf parsley finely chopped (but keep the stalks)

• 1 bay leaf

• 1/4 onion, thickly sliced

• 5 peppercorns

• Pinch of nutmeg

• 20g plain flour

• 40g butter

• Squeeze of lemon juice

• Salt and pepper to season

Directions

1. Put the milk, parsley stalks, bay leaf, onion, peppercorns and nutmeg in a heavy-bottomed pan.

2. Bring to the boil over a medium heat, then remove from the heat and allow to go cold. This will help to infuse the milk before making the sauce.

3. Slowly melt the butter in another saucepan. Add the flour and stir continuously for a minute so that you cook out the raw flour flavour. Remove from the heat.

4. Strain the milk through a sieve to remove the infusing ingredients and slowly add the milk to the butter and flour mixture. Keep combining a little more milk every few seconds until you’ve added it all. You should now have a thin, lump-free sauce.

5. Return the pan to the heat and stir the sauce until it starts to thicken. This will take about 5 minutes.

6. Once it’s thick, remove from the heat. Add the chopped parsley, lemon juice, salt and pepper.

7. Serve your parsley sauce with salty roast gammon and new potatoes, crispy fishcakes or grilled white fish.

Father’s Day: Treat Your Father To A Special Mea...

Today is Father’s Day. It also happens to be my sister’s birthday (Happy Birthday Lisa!) and I thought it was the perfect day to try a recipe I saw on one of my favourite cooking shows, Saturday Morning Kitchen. It aired on June 5th and featured the wonderful chef Michel Roux, who prepared Pork Sausages with a Pineapple Salsa and Rocket Salad.

What struck me right away about this dish was serving sausages with something other then the usual potatoes, gravy and Yorkshire pudding. Instead the pineapple salsa and rocket salad are a light and zesty alternative, absolutely perfect for a warm summer evening.

This is a very simple and elegant meal to prepare. The most labour intensive part of the dish is the salsa and that was much easier to make then I expected. I have never had pineapple salsa before but it was incredible. The pineapple combined with the fresh chilli, chill sauce and lime juice (and a bit of brown sugar) was sweet and tangy with a lovely bit of heat that came through wonderfully. It wasn’t overpowering at all. This is something I plan on making again and I think it would also go nicely alongside tuna or swordfish steaks.

The only adjustments I had to make to the recipe were with the herbs and the sambal oelek (Indonesian chilli sauce). Our coriander isn’t doing very well and I used the last few sad looking leaves which didn’t even come close to making up the 2 tablespoons needed for the salsa. So I used a combination of coriander, apple mint and a wee bit of lemon thyme. I also didn’t have the Indonesian chilli sauce but fortunately there was some Tiger chilli sauce lurking in the back of the fridge which I used instead. I’m not sure how much of a difference this made to the dish, but the salsa tasted pretty good in spite of these changes.

It was a fun and satisfying meal to make and what was so great was the way chef Michel Roux made it seem so effortless. It really showed me that you can create simple, wonderful meals that taste like they come from a 5 star restaurant, in your own home. Sadly my parents and sister live many thousands of miles away, so we weren’t able to share this special meal together. I do plan on making it for them when we meet up later this summer. So you guys have fair warning – get some white wine chilling in the fridge! On the show they suggested a Riesling which happens to be one of my favourite white wines.

For dessert we used up the left over pineapple and apple mint to make a fruit salad. We added some blueberries, strawberries and a chopped up banana along with a tiny squeeze of fresh lemon juice. We served it with a generous dollop of vanilla yoghurt. It was a lovely way to finish the meal.
