French Onion soup has to be one of my all time favourite lunches. It has everything you need; sweet caramelized onions in a rich broth, crispy garlicky croutons and lots and lots of Gruyere cheese. Comforting, nourishing and flavoursome β it always scores 11 out 10 with me!
Itβs the perfect meal for a lazy Sunday afternoon.
Check out this great recipe for the vegetarian version I used.
The only changes I made to the recipe was using 1 cup of grated Gruyere cheese rather then the Swiss cheese she used. I also used a small baguette and cut 3 pieces for each bowl of soup. I lightly grilled them with a garlic butter mixture before placing in the soup and topping with the cheese.
Thank you so much Luna, for this recipe! I love French Onion Soup but haven’t had it since I had it one day and didn’t realise beef stock was in it. I really love that you put up this vegetarian version and can’t wait to try it.
Can I ask why the gruyere cheese instead of swiss? Does it make it yummier? π
I love how your recipes are so wholesome but also easy for even me to do. Keep them coming!

Hi Chrissy, thank you so much for your comments! I am delighted you are enjoying the recipes – and yes – definitely give the french onion soup a try. It is delicious! Gruyere is a form of Swiss cheese which has been aged for longer (about 5 months to a year) this enhances the flavour.I personally like to use Gruyere cheese as its strong salty and slightly nutty flavour lends itself well to the soup. Swiss or Emmental cheese are just as good but they are both much milder – so it depends on how you like your cheese!
